Turkey Taco Lettuce Wraps
Ingredients
1 lb. ground turkey
1 to 1-1/2 onion, diced
2 garlic cloves, minced
1 can black beans
1 jar low sugar salsa
1 avocado
additional fixins - see notes below

Taco Seasoning
1 Tbs. chili powder
1 tsp. garlic powder
1/2 tsp. onion powder
1/4 tsp. red pepper flakes (add more if you like it hot)
1/4 tsp. oregano
2 tsp. cumin
1 tsp. salt
1/2 tsp ground pepper

Directions

Spray a medium sized skillet with olive oil (or coat with 1 tsp. olive oil)

heat to medium high heat.

Add the diced onion and saute until translucent. Approximately 5-7 minutes.

Add 2 cloves of diced garlic to the pan, saute with onions 1-2 minutes.

Add black beans and reduce to a simmer.

In another pan, heated to medium to high heat brown the turkey meat.

As meat is browning, add taco seasoning to taste. DO NOT EAT RAW TURKEY MEAT. Cook the turkey meat until it is no longer pink.

Combine the turkey meat and sauce, simmer for 10 minutes.

Add additional taco seasoning if desired.

Serve with sliced avocado or other fixins. See notes below for ideas
No black beans on hand; add white or red or a combination of them all!

Be creative, have bell peppers at home? Dice them up and add them to the simmering sauce.
Like it spicy? Add hot sauce to the lime mixture or season with spices.

To make a healthy swap, use plain Greek yogurt instead of sour cream. Flavor the yogurt with some cilantro and lime for an added punch to your taco.
​
Use shredded cheese to add to your wrap, but be sure to watch your portion sizes.
