Grilled Chicken Skewers


2 - 3 Chicken Breasts, cut into cubes

1 Tbs. olive oil

1 lime, juiced

4 garlic cloves, minced

1 medium zucchini, sliced into 1" pieces

2 cups of button mushrooms

1 red bell pepper, sliced Into 2" pieces

1 green bell pepper, sliced into 2" pieces

1 red onion, cut into eights

Salt and pepper to taste

Wooden skewers, soaked in cold water for 15 minutes, to prevent burning. 


  • Place skewers in water to soak.

  • Combine olive oil, garlic and lime juice in a bowl.

  • Cut chicken into cubes

  • Toss chicken with the lime juice mixture, set aside.  

  • Prep the vegetables 

  • Prepare the grill, set to a medium heat.

  • While the grill is warming, skewer the chicken, and vegetables

  • Lay on a tray and season with salt and pepper to taste

  • Grill until chicken is fully cooked, 165 degrees.

Change up the protein, or add additional proteins.

Add or swap the vegetables; tomatoes, for example, are wonderful on the grill.


Like it spicy? Add hot sauce to the lime mixture or season with spices. 

If you don't have a grill prepare this dish as a saute.
