These little gems are more than just a tasty treat; they're a powerhouse of nutrition created to energize your day and stabilize your blood sugar.
Ingredients
½ broccoli head
5 eggs
1 clove garlic, minced
pinch of chili flakes, optional
4 slices ham, chopped
â…“Â cup (30g) grated cheese
Preparation
Preheat the oven to 350°F
Bring a pot of water to a boil. Gently add in the broccoli and cook for approximately 3 minutes. Strain and cut into small pieces.
In a medium size bowl beat the eggs. Add in the minced garlic and season with salt and pepper, and chili flakes if using.Â
Grease a 6 cups of a muffin tin with olive oil or butter (Or place 6 cupcake liners for easy clean up.)
Fill each cup evenly with divided broccoli, ham, and grated cheese.
Pour the beaten eggs into the cups and bake in the oven for 10-15 minutes, or until eggs have set.
