Avocado Toast Recipe

Grilled Chicken Skewers

Ingredients

1 Slice of Bread, such as Canyon Bakehouse or Ezekiel

1/2 of an avocado

1/2 lemon, squeezed 

1 Egg

Salt & Pepper

Additional Seasonings - see notes

Directions

  • Toast bread to your liking

  • While bread is toasting, prepare your avocado.

  • place avocado in a bowl and mash with the back of a fork.  Squeeze 1/2 the lemon into the mash and add a pinch of salt & pepper to taste.

  • Once bread is done spread 1/2 the mashed avocado mixture onto the toast.

  • Spray a medium non stick pan with olive oil.  Place on medium heat. 

  • Add whole egg and cover with a lid.  

  • Cook until egg yolk turns a light white color.  For  a less done egg stop here, for a more well done egg flip over and cook approximately 3 - 5 minutes longer.  

  • Slide egg onto prepared toast

Notes

Play with the seasonings.  You could add everything but the bagel seasoning to the avocado or sprinkle on top of the egg.

Like it spicy? Drizzle with hot sauce.  Add raw diced onion to the avocado mash. 

​

Rub raw garlic on the warm toast to infuse garlic flavor without overpowering the meal.  

​

Add tomatoes to the avocado toast, drizzle with balsamic.  

​

Make a scrambled egg instead of a fried egg.
